So you're baking more than ever before, huh?

Recipes
If you don’t have a baking sheet large enough to hold the two loaves of dough side by side with a little room between them, use two sheets. Position the oven racks in the lower and upper thirds of the oven before preheating it, and rotate the pans from shelf to shelf and front to back about halfway through baking.

These soft butter cookies are made with mooncake molds, reminiscent of block print stamps from Jaipur.

Recipes
The dough for these cookies can also be used to make a delicious crust for pies and tarts, such as the Key Lime Tart on page 261; try it for cheesecake, as well.

A basket of unusual breadsticks will vanish in no time. The fact that you scatter the strips of dough on baking sheets rather like pick-up sticks results in great texture: they’re chewy where the strips overlap and crisp where they don’t.

Editor's note: This Plain French Bread (or Pain Français) recipe accompanies an excerpt from Bob Spitz's book Dearie: The Remarkable Life of Julia Child, published on Epicurious on the occasion of Julia Child's Centennial.
Count on a minimum of 6 1/2 to 7 hours from the time you start the dough to the time it is ready for the oven, and half an hour for baking. While you cannot take less time, you may take as much more time as you wish by using the delayed-action techniques described at the end of the recipe.

Cheesecake is just the beginning of what this no-bake, back-pocket wonder can do.

Recipes
The crumbly texture of a graham cracker crust pairs best with creamy fillings; it is extremely easy to make—just combine cookie crumbs with melted butter and a small amount of sugar, press the mixture into a pie plate, and bake.

Recipes
The genius part of this rich and moist sheet cake recipe is the “reverse creaming” method. Instead of creaming butter and sugar before adding the liquid ingredients and flour, you’ll gradually add the liquid ingredients into the flour. As a result, the cake bakes almost perfectly flat—no domed tops, no layers to trim.

These edible cups are easiest to bake on baking sheets lined with parchment paper, rather than thick silicone baking mats, since they’re whisper thin and somewhat fragile. Overturned teacups make the perfect molds, although you can use anything that’s relatively wide with a flat bottom, such as a custard cup. After baking, if any cookies cool before you’ve had a chance to mold them into cookie cups, simply pop the baking sheet back in the oven for about 30 seconds to make them supple and try again.
