I made a fool of myself when I met Claudia Fleming, who was for many years a noted pastry chef in New York City. But I couldn’t help myself—I flipped out whenever I tasted her desserts. Her multiflavored combinations managed to perfectly balance familiar, everyday ingredients with sophisticated presentations. Every time I ran into her, I’d gush about how wonderful her desserts were as I watched her slowly backing away from this clearly unbalanced fan. I was always intrigued by her combination of gingerbread with rich, malty stout and was inspired to create a cupcake using the same blend of flavors. I add a bright-tasting lime frosting which complements the spicy cake. If you make these, you’re likely to have a few deranged fans, too. Consider yourself warned.
Although this sweet-tart cheesecake is great with a homemade graham cracker crust, which you can whip up pretty quickly, to make this easy cheesecake even easier, use a 9-inch ready-to-use all-natural graham cracker piecrust. If you like a limier flavor, add a teaspoon of lime zest to the batter (which you can sample before cooking because, thanks to chia, there are no raw eggs to worry about).
If you can't find fresh Key limes in your area, you can substitute bottled Key lime juice. We've tried several different kinds in our test kitchen, and the only one we like so far is Manhattan brand*.
Chef Quincy Adams Erickson and I worked together in Austin during my stint as executive chef for a national chain. A graduate of the famed cooking school Le Cordon Bleu in Paris, Quincy now owns Austin’s Fête Accompli, a catering company specializing in fresh, handmade appetizers. I asked Quincy to give me a cocktail party recipe for this book and, as usual, she came up with a winner. Make sure you have a small cookie cutter that will make bite-size shapes that your guests can easily pop in their mouths. Use whatever shape you’d like: circles, hearts, stars, triangles, or squares.
