Tarte Tatin—Josh's all-time favorite dessert!—is a classic French upside-down apple tart that is prepared from start to finish in just one pan. It starts with sugar that cooks in the pan until it's caramelized, and then the apples are added and cooked until they are meltingly tender. The apple filling is then topped with pastry and the pan goes into the oven. The tarte is then inverted (to the delight of everyone watching) and served. While pie dough is the typical crust used for this tart, we've swapped in store-bought puff pastry for an easier preparation.
Tarte Tatin is a French upside-down apple tart named for the two sisters who invented the dish. This version is topped with puff pastry and baked in a wood-fired oven or by indirect heat on a grill. It can be topped with slightly sweetened whipped cream, or better still with a frothy sabayon infused with an aromatic late-harvest Riesling. The sabayon is also terrific on its own or with berries. Choose a good baking or pie apple such as Gala, Pink Lady, Gravenstein, Braeburn, or Jonathan.
Palmer wanders out behind the Dry Creek Kitchen to pick the apples for this tart. He generally goes for a combination of Macouns, Pippins, and/or Gravensteins, but we used easy-to-find Golden Delicious and were very pleased with the results. Palmer likes to serve this French classic warm, with a scoop of chestnut ice cream and crisp strips of candied bacon alongside. The three elements make for a textural symphony, but this caramelized beauty is also fantastic paired with a humble scoop of store-bought vanilla — or even by itself.
When I was an apprentice, I had to perfect a four-star version of this classic dessert. It was painfully involved and difficult. Over the years, I discovered that I much prefer a more rustic take. The fundamentals remain the same, and I still love the Tatin technique. The sound of the buttery caramel sizzling is music to my ears. Serve this with a little crème fraîche, and life is beautiful.
I love a good, classic version of tarte Tatin, the famed French caramelized-apple tart, as much as the next guy—probably even more. But adding slices of quince makes this variation extra inviting to me. If you’re unfamiliar with quince, a cousin of the apple, it’s likely because they’re inedible in their raw state, so they tend to get neglected by folks who don’t know about the seductive, beguiling flavor that’s coaxed out of them by cooking. Like apples, quince are in season in the fall, and they’re easy to find by following your nose; when they’re ripe, their scent is rather intoxicating. I often keep a bowl of them on my dining table to perfume my entire apartment.
Chris's Recipe Review: Individual Caroline Peach Tarte Tatins with Lemon Ice Cream. Baking the peach tarte tatins was a bit of a disaster. But I will forever treasure that disaster because it brought me this ice cream recipe.

Join Carla in the Test Kitchen as she makes an apple tart! This unadorned tart bakes at a fairly high temperature and boasts a deeply browned crisp crust. The apples at the bottom of the tart are insulated from direct heat, so they steam and soften into a very tender layer. The ones up top hold their shape, which means you’ll get a mix of textures in each bite.
