Recipes
We love using preserved lemons in the BA kitchen, and Philip Krajeck's recipe makes the best we've ever tasted. They take 10 minutes to prep and need only two weeks to cure. Sure, you can buy preserved lemons at specialty stores, but when the end result is this good, we say make your own.

One of the great pleasures of salting lies in not salting. Salt cure your lemons beforehand, cook and assemble your ingredients, serve, and let the lemon’s super-salted flavors hop around the plate like Taskiouine dancers. The citrus and salt goad each other on in a warrior’s dance, all white tunics and turbans and powder horns, and in your mind ring the bells of camels and the beat of rawhide tambourines. Simmer chicken in diced preserved lemon, olives, and fresh coriander for a superb tagine. Make a compound butter of minced preserved lemon, ancho or espanola peppers, and cilantro to serve over pan-fried fish. Chop preserved lemon with parsley, dill, shallots, and olive oil for a relish to top anything from rack of lamb to a goat cheese tart. And cut a strip of rind to garnish a negroni cocktail.

Preserved lemons should be in everyone’s pantry. They taste like sunshine, adding bright acidity and color to a dish. We often mince the preserved lemon and use it to season crab salads, enrich pan sauces for fish and meat, and flavor pastas like our preserved lemon noodles. Thinly sliced and fried, they can go sweet or savory depending on how you season them. Chopped up with fresh garlic and parsley, they make a wonderful replacement for classic gremolata. Create a tangy finishing sauce for grilled meat and vegetables by mixing them with olive oil and minced herbs. You can slide them under the skin of your roast chicken for an amazing lemon chicken. Even a simple bowl of noodles with butter and cheese is given unexpected zest with the addition of some preserved lemon.

I learned from Claudia Roden, who brought the secrets of Middle Eastern cooking to this country in the 1960s, how to make this invaluable preserve, which adds zest to so many dishes. I even find that you can use a little of it in place of fresh lemons to perk up a dish.

Preserved lemons are a staple of North African cuisine that are called for in two recipes in this book, Onion and Saffron Chicken (page 295) and Roast Pepper Salad with Tomatoes and Preserved Lemon (page 193). But you can add them to almost any tagine—chicken, fish, or lamb—with excellent results. In fact, if you have a batch of these on hand, you may find yourself incorporating them into dishes that have nothing to do with their land of origin, things like Sautéed Scallops with Garlic (page 211), or as an adjunct to the fresh lemon in the meunière recipe on page 240. I’d had mixed luck with preserving lemons over the years and, while I can’t quite account for why that was, I can say I’ve worked out a way around it: treat preserved lemons like a “quick” or refrigerator pickle. The spices listed here are optional—feel free to omit them, change their quantities, or add to them to taste. They’re included to round out the sweet lemony high note and salty, acidic tang that characterizes the flavor of the preserved lemons.

A staple of the Moroccan kitchen, preserved lemons have a tangy, fermented taste. For most recipes, the pulpy flesh is cut away and only the thick peel is used. Brian uses preserved lemons in a flavored butter for Grilled Mahimahi with Preserved Lemon Butter (page 113) and in Manila Clams, Arugula, and White Beans with Preserved Lemon Vinaigrette (page 54).

Don’t be surprised by the texture of these preserved lemons—the inside is very soft and the outside has a bit of firmness. Use the lemons in vinaigrettes, with white beans, as a rub for steak or roast chicken, or in a marinade or sauce for chicken or seafood. They’ll keep for a week in the refrigerator.

Pungent and concentrated in flavor, preserved lemons are popular in Moroccan and Middle Eastern cooking. To use them, pull the lemon flesh away from the rind and discard. Give the rind a brief rinse in cold water, then dice or chop and add to a dish at the end of cooking. I use preserved lemons in my Artichoke Dolmades with Lemon Sauce (p. 20). They also add a distinct flavor to couscous and cracked wheat salads. You’ll want to use them sparingly (a tablespoon or two is typically enough) so they don’t overpower other flavors. This recipe doubles or triples easily.

(Djej Emshmel) Editor's note: The recipe and introductory text below are excerpted from Paula Wolfert's book Couscous and Other Good Food From Morocco. Wolfert also shared some helpful cooking tips exclusively with Epicurious, which we've added at the bottom of the page. Preserved lemons, sold loose in the souks, are one of the indispensable ingredients of Moroccan cooking, used in fragrant lamb and vegetable tagines, recipes for chicken with lemons and olives , and salads. Their unique pickled taste and special silken texture cannot be duplicated with fresh lemon or lime juice, despite what some food writers have said. In Morocco they are made with a mixture of fragrant-skinned doqq and tart boussera lemons, but I have had excellent luck with American lemons from Florida and California. Moroccan Jews have a slightly different procedure for pickling, which involves the use of olive oil, but this recipe, which includes optional herbs (in the manner of Safi), will produce a true Moroccan preserved-lemon taste. The important thing in preserving lemons is to be certain they are completely covered with salted lemon juice. With my recipe you can use the lemon juice over and over again. (As a matter of fact, I keep a jar of used pickling juice in the kitchen, and when I make Bloody Marys or salad dressings and have half a lemon left over, I toss it into the jar and let it marinate with the rest.) Use wooden utensils to remove the lemons as needed. Sometimes you will see a sort of lacy, white substance clinging to preserved lemons in their jar; it is perfectly harmless, but should be rinsed off for aesthetic reasons just before the lemons are used. Preserved lemons are rinsed, in any case, to rid them of their salty taste. Cook with both pulps and rinds, if desired.

Season: November to March. Preserved lemons have a strong association with Middle Eastern and North African cuisines, and their unique zesty, salty yet mellow flavor permeates many of the traditional meat and couscous dishes of those regions. Strips of preserved lemon can also be added to salads, soups, and dressings, or mixed with olives and other appetizers. They are exceptionally easy to prepare, and I like to make them around the turn of the year when the new season’s lemons from Spain and Italy are in the shops.

Preserved lemons are perhaps most at home in Moroccan dishes, but we love their complex, bright flavor and aroma in all kinds of soups, stews, and salads. We've adapted Mediterranean-food authority Paula Wolfert's quick method and made it even faster by blanching the lemons first. If you manage to find Meyer lemons, this is a great way to capture their unforgettable taste and perfume.

You can serve this with thick cream or mascarpone, or with vanilla ice cream. For the preserve to last a long time, it needs the same weight of sugar as of figs. If you will be eating it within 2 weeks you can make it much less sweet, but keep it in the refrigerator.
